Carol's Light Lobster Bisque ** New!!

1 pkg Louis Kemp Lobster Delights
1 small onion, chopped fine
2 - 3 stalks celery, chopped fine
1/4 C Smart Balance Light Margarine
|
3 cloves garlic, minced
2 T flour
2 C Skim milk, warmed
1 C fat free chicken broth
|
Melt margarine in skillet on medium high heat, then saute onion, celery and garlic until soft, about 5 or 10 minutes.
Whisk in the flour, then slowly add the milk and whisk until well-blended. Gradually add the chicken broth. Add salt,
pepper and thyme to taste. Bring to a boil. Add lobster, and simmer 20 minutes. Puree lobster bits in blender with
some broth. Return to pot. Note: may add more chicken broth to thin if desired.

White Chili
|
1 onion, chopped
1-1/2 tsp cumin
1/2 Tbsp olive oil
1 can chick peas
|
1 can white kidney beans
1 can white shoe peg corn
1 can mild chopped green chilies
2 cubes chicken bouillon
|
In small skillet, add onion and cumin to hot oil. Saute for a few minutes, until soft.
Drain beans, corn, and chilies; mix well in 2 quart casserole dish. Add onion, bouillon
cubes and water to cover. Heat 50 minutes, covered, in pre-heated 350 degree oven.
